Let’s pretend it is summer in the UK *hiding from rain* and let’s pretend it hasn’t been forever since I posted a recipe, ok? good.
Now that we’re done pretending let’s get down to business.
I’ve been fairly addicted to blitzing stuff lately. might be baby-food related issues but idk so let’s move on. I’ve been blitzing and grinding and basically turning everything I can put my hands on into liquid. I even tried making a milkshake out of my cat. it tasted gross. like, mud and hair and cat breath kinda gross. ANYWAY. I’m big on making popsicles now (cuz it’s “summer” remember?) and they’re also like 100% vegan and made out of awesome healthy stuff which you can totally make under 10 minuets and enjoy on a hot sunny day in a place that is clearly not the UK.
What you’ll need:
- Popsicles moulds
- Food processor
- A handful of berries
- Hazelnut or coconut milk
- Vanilla extract
- Honey (or date syrup)
Put them nice berries in a food processor and blitz for a minuet, add 2 cups of milk, 3 tbs of honey, 1 tbs Vanilla and blitz for a good 5 minuets!
Sieve out all the nasty bits, berries have loads and we want our liquid to be smooth like butter.
Pour the liquid into the moulds and tuck in the freezer for a few hours until ready!
