Red Plum, Raspberry & Browned Butter Cobbler

It’s been a while since I posted a recipe but don’t hate. I’ve been traveling a lot the past couple of month so my baking has mostly consisted of things I could throw together easily and fast due to lack of time, so naturally I thought I would share one of my EASY & FAST recipes which is always a winner round here and never fail to make us all lick our plates. cat included.

This is a quick cheeky cobbler, full of them amazing juicy summer fruits I love so much, it melts in your mouth in seconds but still have a crunchy crust, and the best part? its soooo so sour. and sweet. and sour and sweet. and then some more sour. I fucking LOVE it. the alternation between those two tastes makes you all giggly. like when you were a kid and had way too much of them sour candies? that.

What you’ll need:

  • A 10″ round baking dish
  • 100g salted butter + a knob of butter for greasing
  • 1 cup granulated sugar
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 4 medium ripe red plums, sliced
  • 1/2 cup raspberries


Preheat oven to 175°C & grease the dish with a knob of butter.

In a small pan, melt and brown the butter. Be sure to keep a close eye on it, and remove the butter from the pan as soon as it browns. If you keep the butter in the pan for too long, it may continue to cook and burn… we don’t want that, right? right.

Cut your plums, cut them with love.


In a medium bowl, whisk together the sugar, flour, baking powder and salt. Whisk in the milk.

Whisk in the melted butter.


Add the batter to the prepared greased dish.

Arrange the plum slices & raspberries around the batter.


Bake for 30 minutes, until golden and bubbling.

Remove dish from the oven and sprinkle with 2 Tablespoons of demerara sugar, return the dish to the oven for 5 to 10 minutes to finish cooking.

Remove from oven and serve slightly warm, enjoy! :)
