Wait WHAT?! how come it’s May already? it’s like April wasn’t here at all. my parents were visiting from Israel (more like, escaped the almost month long jewish holiday period) and I was so occupied with hosting them and simultaneously running around the house like a mad dawg after my toddler (a.k.a the energizer bunny), that writing my monthly post totally went out the window. REAL LIFE Y U B LIKE DAT.
Some days you wake up and it’s so sunny and lovely outside that all you want to do is sit on your lawn and stuff your face in brownies, but when you walk into the kitchen suddenly your face be all like, but it’s totally PBJ TIME! and then you’re like, WAIT! why don’t I put my favourite sandwich onto a fudge brownie!?!! MIND. FUCKING. BLOWN. so you gather the ingredients, stir up some magic and finally the moment has arrived – you taste these perfect squares of sexiness; they’re so soft and fudgy that they instantly melt in your mouth, they’re sweet and then they’re salty and then sweet again OHHHHH. #mouthgasm
Go on now. you know you want to. into the kitchen chop chop.
For the Brownies:
130g unsalted butter
60g dark chocolate
100g milk chocolate
3/4 cup granulated sugar
1 teaspoon pure vanilla extract
3 large eggs
2/3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
For the Topping:
4 tablespoons unsalted butter, melted
3/4 cup smooth peanut butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/3 cup strawberry jam
Place a rack in the upper third of the oven and preheat to 170C.
Grease an 8×8-inch baking pan. Line with parchment paper so that it overhangs on two sides and grease the parchment paper as well.
Combine butter and chocolate in a heat proof bowl and place in the microwave. heat in short intervals of 15 seconds and whisk in between until the chocolate has fully melted and incorporated with the butter. it should be smooth and velvety – if it’s not then you’ve probably burnt the chocolate you fool.
Whisk in the sugar and vanilla extract.
Allow the chocolate mixture to cool slightly then whisk in the eggs, one at a time whisking very well between each addition.
In a small bowl, whisk together flour, baking powder and salt.
Fold in the flour mixture into the chocolate mixture until thoroughly combined.
Spoon into prepared pan.
To make the Peanut Butter Filling, whisk together melted butter, peanut butter, salt and vanilla extract until smooth.
Spoon the peanut butter mixture and the strawberry jam over the top of the brownie batter.
Use a butter knife to swirl the two together.
Bake for about 40 minutes until a skewer inserted in the center comes our mostly clean with just a few moist crumbs.
Let cool for at least 30 minutes before slicing and try your best not to eat the entire batch. we failed. miserably. 😁
