Apple, Current & Goji Oat Bars

In the past few month I find myself making a batch of these bad boys at least once a week, and before I can even mumble omnomnom, they’re gone in a flash!

Tucked with a good punch of healthy ingredients such as oats and berries (high in Vitamin C and antioxidant wonders!) these bars are perfect to toss in your lunchbox (i’ll pretend you still carry one) or just grab a square on your way out the door. they’re firm and crunchy, full of tingly sourness thanks to the ever so perfect marry between bramley apples and the wonderful little goji berries, and melt in your mouth instantly.

let’s dive in shell we?

Apple, Current & Goji Oat Bars

What you’ll need:

    • 200g plain flour
    • 1tsp baking powder
    • 1/4 tsp salt
    • 200g unsalted butter
    • 170g soft light brown sugar
    • 120g rolled oats
    • 3 Bramley apples
    • 4tbsp cornflour
    • 3tsp cinnamon
    • 1tsp nutmeg
    • 70g currants
    • 70g Goji berries (if you can’t find em’ – tuck in cranberries instead, I won’t tell anyone.)

Preheat the oven to 170°C and line a tray with baking paper – a medium size roasting tin is perfect.

Sift flour, salt and baking powder, then rub butter in with fingers until you get a crumble texture, stir in the sugar and oats and rub again until combined.

pour half the mixture into your tray and push down for the base to create a rectangle.

Peel and slice the apples, then toss them in the cornflour and spice mix until they’re perfectly covered in dat magic dust.

Place the spice-coated apples on top of the oat mixture then sprinkle over the currants & goji berries.

then press in gently the remaining crumble mix on top to cover it all up, sandwich style!

Bake for around 30-40 minutes, until the crumble is golden.

Allow to cool completely in the baking tray before slicing to squares and serving…. enjoy! :)
